Today we offer a refreshing and original recipe: Sobia, a traditional Egyptian drink made with rice, milk, and coconut. Sweet, spicy, and served cold, it’s the perfect way to beat the heat.

Ingredients:
500 ml water,
100 g rice,
1-liter whole milk,
100 g sugar,
1 teaspoon vanilla essence,
2 teaspoons coconut essence or 30 ml coconut milk,
Cinnamon and cardamom to taste,
Ice cubes.
Preparation
Rinse the rice under running water, then soak it in fresh water for about 30 minutes. After the time has elapsed, bring 500 ml of water to a boil in a saucepan, add the rice, and cook over low heat for 30-40 minutes, stirring occasionally, until the water is absorbed. Let the rice cool completely, then add the cold milk. Add the sugar, vanilla essence, coconut essence (or milk), a pinch of cinnamon and cardamom, and a few ice cubes. Transfer everything to a blender and blend until smooth. Strain the mixture through a fine-mesh sieve and pour into a pitcher. Refrigerate for at least an hour. Serve the Sobia chilled with crushed ice.
