Mealie Maise Bread

Mealie Bread is a simple and nutritious South African sweet corn bread with a hint of spice that will surprise you. Here’s how to make it.

Time 1 hour

Ingredients

330g corn kernels

120ml milk

2 eggs

30g salted butter

180g flour

2 tbsp corn flour

2 tbsp sugar

2 tsp baking powder

1 tsp salt

½ tsp paprika

 

Preparation

 

Preheat the oven to 180g degrees. Grease a loaf tin. Place about 1 cup of corn and the milk in a blender and blend until the corn is reduced to a puree. Add the remaining corn and blend just enough to roughly chop the kernels. Transfer the corn and milk mixture to a bowl. Add the beaten eggs and melted butter.

 

Now combine the flour, corn flour, sugar, baking powder, salt and paprika in the bowl. Mix until incorporated and uniform, Pour the batter into the prepared pan. Bake the bread about 45-50 minutes. Serve hot.

Bobotie

Bobotie is a beef pie flavoured with spices and curry and chili. There are different recipes to make it, we propose a variant between sweet and spicy.

Serves 4

Ingredients
500 gr minced beef

2 onions

4 eggs

200ml milk

100g stale or sandwich bread

1 teaspoon curry

100g almond flour

Salt

Pepper,

Lemon juice to taste

Extra virgin olive oil to taste

2 bay leaves

50g raisins

1 teaspoon sugar

 

Preparation

Leave the bread to soften in a bowl with the milk. Do the same with the raisins by soaking them in warm water. In the meantime, prepare the soffritto in a large pan with extra virgin olive oil and the chopped onions. After a few minutes, add the minced meat, a teaspoon of curry, adding salt and pepper to taste. Squeeze the bread and raisins before adding them to the pan and let cook until you obtain a smooth mixture. Beat two eggs separately and add them, mix everything well. At this point, add the juice of half a lemon, a teaspoon of sugar and the almond flour. Place the mixture on a baking tray covered with baking paper and cover with the remaining milk and the bay leaves. Bake the tray in the oven preheated to 180 degrees for half an hour. Remove the pan from the oven and make small holes on the surface with the help of a fork and add the other two beaten eggs. Bake for another ten minutes. When the surface is golden and firm your bobotie is ready.
