Ghana. Emudro, a refreshing ginger drink

Today we take you to Ghana with the recipe to prepare a fresh drink based on ginger and lime: “Emudro”. Very popular in Ghana, this drink is perfect for the summer and can be prepared in just fifteen minutes.

Time 15 minutes
Serves 3

 

Ingredients

500 ml water

4 ginger roots

3 limes

30 g sugar (to taste)

10 g peppercorns

ice cubes

Preparation

After washing three ginger roots, chop them roughly with a knife. Place them in a food processor with 400 ml of water and the peppercorns. Blend everything. Filter the mixture with the help of a sieve. Throw away the pulp and add the remaining water to the juice. Pour the drink into a saucepan. Wash and chop the remaining ginger and add it to the drink. Bring the Emudro to the boil over medium heat for about 5 minutes, remove from the heat and let it cool completely. Filter the liquid again into a medium jug. Squeeze the juice of two limes and add it to the drink and sweeten to taste. Mix well. Leave the jug in the refrigerator until the drink cools. Serve with ice for a more refreshing effect.

A fresh Ghanaian salad

For summer, it can be a good idea to try the traditional Ghanaian salad, based on fresh and nutritious ingredients such as beans, lettuce and tuna. Ready in a short time, the result is a combination of flavours and aromas that will conquer you.

Time 20 minutes

Serves 4

Ingredients

  • 1 head of lettuce
  • 2 large tomatoes
  • 1 onion
  • 2 carrots
  • 100 g of tuna in oil
  • 1 can of baked beans
  • 4 hardboiled eggs
  • 2 red onions
  • 170 g of steamed green beans
  • 200 g of cannellini beans
  • salt and pepper to taste
  • two tablespoons of mayonnaise

Preparation

Start by roughly chopping the lettuce and placing it in a large bowl. Slice the onions and carrots, and add them to the salad. Do the same by dicing the tomatoes and green beans, and slice the eggs. Finally, add the two types of beans and the tuna. Season with salt and pepper and dress everything with mayonnaise.
