Morocco: Tagine of meat and dried fruit.

Today we go to Morocco to discover a fragrant and tasty traditional dish: the tagine of meat and dried fruit. The Arabic name comes from the terracotta dish in which it is cooked.

Ingredients

1 kg lamb or beef shank,

1 l water, olive oil to taste,

2 large onions,

1 tablespoon sugar,

2 pinches saffron,

1 teaspoon turmeric,

1 tablespoon grated ginger,

1 cinnamon stick, ground pepper to taste.

half a tablespoon ground cinnamon,

150 g pitted prunes,

150 g dried apricots,

100 g flaked almonds, toasted

Preparation

Boil the meat in a pot filled with water. Once boiling, reduce the heat and cook for two hours with the lid on. In the meantime, heat the oil in a large pan. Add the previously chopped onions and cook them over medium-high heat until they are quite golden. At this point, add the sugar and cook for another minute. After cooking the meat for two hours, add the sautéed onions, saffron, turmeric, ginger, cinnamon sticks and ground pepper and cook for another 45 minutes. At this point, add the ground cinnamon and dried fruit and cook for another 15 minutes. Transfer the meat and fruit to a serving dish. If necessary, cook the liquid over high heat to thicken it and pour it over the meat. Just before serving, sprinkle the dried fruit tagine with the toasted almond flakes.

Zaalouk, Moroccan aubergine cream

Zaalouk is a Moroccan sauce made with aubergines, tomatoes and spices, tasty and easy to prepare in just a few minutes.

Time 30 minutes

Serves 4

Ingredients

1 large aubergine, peeled and diced,

3 ripe tomatoes, peeled and chopped,

4 cloves garlic, minced,

2 tablespoons parsley, chopped,

2 tablespoons cilantro, chopped,

1 teaspoon salt,

2 teaspoons paprika,

1 teaspoon cumin,

2 tablespoons olive oil, water,

1 teaspoon white vinegar.

Preparation

In a medium saucepan, combine the aubergine, tomato and spices, stirring well. Increase the heat and bring to a boil. Cover the pan and continue to cook on medium heat for 20 minutes. Add a little water if necessary. Then add the vinegar and stir everything together. Serve with a slice of toasted bread, oil, coriander and paprika to taste.
