African Cuisine. Madagascar

There are many different culinary traditions in Madagascar’s cuisine. The influence of Southeast Asian, African, Oceanic, Indian, Chinese and European immigrants is evident in Madagascar’s cuisine.

A tasty dish based on prawns

Today we take you to Madagascar with Coco Crevettes, a dish based on prawns, coconut and curry, to be enjoyed accompanied by white rice. Here is the recipe:

Time: 30 minutes

Serves 4

Ingredients:

  • 1 kg peeled and cleaned prawns
  • 1 chopped onion
  • 3 cloves garlic
  • 3 chillies
  • 2 tablespoons coconut oil
  • 2 large tomatoes
  • 1 tablespoon grated ginger
  • 2 tablespoons tomato paste
  • 2 tablespoons curry powder
  • 300 ml unsweetened coconut milk
  • Salt to taste
  • 1/2 lemon, black pepper
  • 2 tablespoons chopped coriander (or fresh coriander)
  • 2 ounces of rice

 

Preparation

Chop the onions finely and fry them in a pan together with the garlic and sliced chillies in coconut oil, until the onion softens. At this point add the diced tomatoes, ginger, tomato paste, lemon juice, curry powder, coconut milk, salt and black pepper, stirring well to combine. Then add the prawns and cook for about fifteen minutes. Once cooked, add the coriander first and serve the prawns accompanied by hot steamed rice.

A tasty potato salad

Today we have a simple and tasty recipe: a salad made with potatoes and red onion ready in a few minutes.

Ingredients:

  • 900 g red potatoes (boiled, peeled and cut into small pieces),
  • 40 g pitted black olives,
  • 1 red onion,
  • 250 g parsley,
  • 1 clove garlic,
  • salt to taste,
  • pepper as needed.,
  • 100 ml sour cream,
  • 80 ml mayonnaise,
  • 3 tablespoons green peppercorns

 

Preparation

First, peel the potatoes and boil them in water. Once cooked, remove the peel and cut them into pieces. Cut the red onion into fine pieces. At this point, combine the potatoes, olives, onion and parsley in a large bowl. Mix the ingredients together and season with mayonnaise, sour cream, peppercorns, olives and parsley.

 

Madagascar, a fresh and tasty salad

Today we take you to Madagascar with the recipe for a tasty, quick and fresh salad, perfect for summer: Lasary voatabia. Made with tomatoes and spring onions, seasoned with a combination of hot spices and lime juice, it can be ready in minutes and may be enjoyed alone or as a side dish. In Madagascar, it is often used as a filling for sandwiches.

Time: ten minutes

Serves: 3-4

Ingredients:

  • 2 medium tomatoes, •1 bunch of spring onions, •juice of half a lime, •salt to taste, •half a teaspoon of grated fresh ginger, •a few drops of Tabasco, •black pepper to taste, •chopped parsley or coriander.

Preparation

After washing, de-seeding and dicing the tomatoes, place them in a large bowl. Proceed to chop the spring onions into thin slices and add them to the mixture. Season with half a teaspoon of grated ginger root, Tabasco, and the juice of half a lime. Season with salt and pepper. Mix well and leave to cool in the refrigerator before serving.
